Profile

Dr. Sandra Ama Kaburi is a lecturer in postharvest technology in the Department of Food Science and Postharvest Technology of the Cape Coast Technical University. She is a trained teacher from St. Joseph’s College of Education, Bechem, Ghana. She has a Bachelor of Science Degree in Agricultural Technology from the University for Development Studies, Tamale, Ghana, and a Master of Philosophy (MPhil) and a Ph.D. in Postharvest Technology degrees from the Kwame Nkrumah University of Science and Technology. She is currently the School of Applied Sciences and Technology Programme Coordinator, departmental counsellor, and coordinator of students' projects.

Her research interests lie at the intersection of food safety, processing technologies, sustainable nutrition, and food security. Her research is particularly focused on mitigating aflatoxin contamination in food systems and exploring innovative drying and frying techniques to enhance the safety and quality of processed foods. She is also interested in the formulation and application of emulgels for food, as well as the use of near-infrared (NIR) spectroscopy for rapid quality assessment in agricultural products. She is a member of the Ghana Institute of Horticulturists (GhIH).
