Profile

Professor Emmanuel Kwaw is a Food Scientist with a solid background in Food Science & Engineering.
Professor Kwaw has 15 years of Teaching experience at the tertiary level, with extensive involvement in designing new curricula in Food Science & Postharvest Technology and Hospitality Management. His current role at Cape Coast Technical University (CCTU) involves the preparation and delivery of lectures and laboratory-based practical lessons across a number of disciplines (Food Science, Food Product Development, Sensory Analysis, Food Technology, Food Safety, Fermentation, Microbiology, Food processing and Research Methodology). He supervised over 100 Higher National Diploma and Bachelor of Technology candidates. Prof. Emmanuel Kwaw is also an external assessor to postgraduate candidates in many universities in Ghana. He also serves as programmes Assessor for the Ghana Tertiary Education Commission.

Prof. Kwaw has held various positions at CCTU which includes Director Quality Assurance and Academic Planning, Founding Dean School of Applied Sciences and Technology, Dean School of Applied Sciences and Arts, and Head of Department – Hospitality Management. Prof. Kwaw is currently the Dean School of Applied Sciences and Technology.

Prof Kwaw has pivotal participation in the scientific field and published over 47 peer-reviewed articles in top-tier journals, and 7 book chapters. His contribution in Food Science & Technology has earned him an appointment as an Honourary Executive member of the Ghana Association of Food Scientist and Technologist (GhAFoST) and the Vice President of African Society of Food Science and Technology (ASoFoST). He is a reviewer for many Food Science Citation Indexed (SCI) Journals such as Food Chemistry, Journal of Food Science and Technology, Journal of Food Processing Engineering, Journal of Culinary Science and Technology, Journal of Food Measurement and Characterisation, Journal of Food Quality, Food Chemistry Advances, Cogent Food and Agriculture among others. His scholarly works which spans across Fermentation Technology, Functional Foods, Food Chemistry, Food Processing, and Food Preservation, has been translational because it is integrative, holistic, and cross-sectional.

Prof. Kwaw has a wealth of scientific and managerial qualities which enables him to collaborate with others locally and internationally. Prof. Kwaw’s knowledge and rich experience in relating to and dealing with people acquired through various extra-curricular activities and collaborations have also developed in him a team player, a focused attitude, excellent communication and interpersonal skills. He believes that, teamwork and good leadership at the workplace and the outside world can help solve most scientific and administrative challenges and improve on standards.
